Ingredients
900g/2lb runner beans 1 large onion, chopped 1 whole garlic, chopped 2 large tomatoes, peeled and chopped salt and black pepper, to taste olive oil to fry
Method
1. Cut the beans into segments, wash and dry them. 2. Fry the onions in a little olive oil until just soft. Add the chopped garlic and fry a little longer. 3. Add the tomatoes, salt and pepper and fry until the tomatoes are soft, then add the beans and mix well. 4. Fry rapidly for 5 minutes, then add 290ml/½ pint water. Continue to cook until all the liquid has evapourated and the beans are tender. 5. Serve cold.
