Easter or Lenten biscuits biscuit
no chef Makes 24 biscuits

Preparation time less than 30 mins

Cooking time 30 mins to 1 hour

Vegetarian


Ingredients
110g/4oz butter
110g/4oz caster sugar
1 egg, yolk only
225g/8oz plain flour
30g/1oz chopped mixed peel
55g/2oz currants
milk to bind
Glaze:
1 egg, white only
caster sugar


Method
1. In a large bowl, cream the butter and sugar until pale and fluffy.
2. Beat the egg yolk into the mixture and fold in the flour, currants and peel, mixing well.
3. Pour in a little milk at a time, mixing well until the mixture forms a fairly firm dough.
4. Roll out the dough to about 3mm/1/8in thick and cut into 5cm/2in rounds.
5. Place the rounds on a greased baking sheet and bake in the oven for 15-20 minutes at 180C/350F/Gas 4.
6. After 10 minutes, remove the biscuits from the oven and brush each one quickly with egg white and sprinkle with caster sugar.
7. Return to the oven for 5-10 minutes more to finish baking.
8. Put the biscuits on a wire rack to cool.
