Deep-fried tortilla chips with honey and oranges orange

Serves 1

Preparation time less than 30 mins

Cooking time 10 to 30 mins

Vegetarian Quick Recipe


Ingredients
400ml/14fl oz vegetable oil, for deep frying
1 tortilla, cut into thin strips
1 orange, peeled and segmented
1 tbsp honey
icing sugar, to dust


Method
1. Place the vegetable oil into a deep, heavy-bottomed saucepan and heat until a small cube of bread sizzles and turns golden when dropped into it. (CAUTION: hot oil can be dangerous. Do not leave unattended.)
2. Carefully add the shredded tortilla to the oil and deep-fry for three minutes, or until crisp and golden. Carefully remove with a slotted spoon and drain on kitchen paper.
3. To serve, place the orange segments onto a plate. Place the tortilla pieces on top of the orange pieces, drizzle with honey and dust with icing sugar.
