250g/9oz ripe tomatoes
1 green pepper
½ cucumber
2 spring onions
1 sprig chopped mint
1 tbsp paprika paste
1 tbsp olive oil
2 tbsp vinegar
salt and pepper
This is a Dig In recipe.
1. Peel the tomatoes and cucumber, de-seed the pepper and remove the outer layer of the spring onions.
2. Chop all the vegetables as finely as possible without totally crushing them.
3. Mix in all the other ingredients, stir well and serve cold.
