Cranberry Compote cranberry

Serves 4-6

Vegetarian Quick Recipe


Ingredients
110g/4oz cranberries
1 tsp ground mixed spice
55g/2oz caster sugar
1 lime, juice and zest
½ lemon, juice only
2 tbsp clear honey
290ml/½pt white wine
100ml/3½fl oz champagne
1 tbsp arrowroot mixed with 1 tbsp water
55g/2oz mascarpone


Method
1. In a large saucepan, mix together the cranberries, mixed spice, caster sugar, lime zest and juice, lemon juice, honey, wine and champagne. Bring to the boil.
2. Reduce the heat to a simmer and stir in the arrowroot and water mixture.
3. Simmer for 5-6 minutes or until the cranberries begin to pop.
4. Serve with a spoonful of mascarpone on top.
