Ingredients
225g/8oz brown and white crabmeat 340g/12oz frozen leaf spinach 1 onion, peeled and finely chopped 750ml/1¼ pint fish or vegetable stock pinch of freshly grated nutmeg salt and freshly ground black pepper
Method
1. Place the spinach in a saucepan with the onion, stock, nutmeg and seasoning. 2. Bring to the boil and simmer for 5 minutes. Allow to cool. 3. Add the crabmeat to the spinach mixture and blend, half at a time, until smooth. 4. Return to the saucepan and simmer for 5 minutes. 5. Serve with fromage frais or natural yoghurt.
