Courgette and goats cheese salad courgette

Vegetarian Quick Recipe


Ingredients
4-6 young firm courgettes
1 medium head chicory
4 medium tomatoes
125g/4oz firm English goats' cheese
2 tbsp toasted pine nuts
For the dressing:
4 tbsp olive oil
1 tbsp lemon juice
a few leaves fresh mint, chopped
a few sprigs fresh oregano, chopped (optional)
salt and black pepper


Method
1. Wash, dry and cut up all the vegetables into good sized chunks. Cut the goats' cheese into smaller chunks.
2. Shake the ingredients for the dressing in a jar, and pour over the vegetables. Toss well. Sprinkle over the pine nuts and serve.
