Corn Beef Fritters and Champ other

Quick Recipe


Ingredients
85g/3oz plain flour
1 egg, beaten
85g/3oz breadcrumbs
110g/4oz corned beef, cut into slices
290ml/½ pint vegetable oil
200g/7oz pre-cooked mashed potatoes
2 spring onions, chopped


Method
1. Heat the vegetable oil in a large saucepan. (NB. Hot oil is dangerous. Do not leave unattended.)
2. Take the fingers of corned beef. Dip them first into the flour, then the egg and then the breadcrumbs.
3. Drop the corned beef into the hot oil. Deep-fry for 3 minutes or until golden and crispy.
4. While the corned beef is frying, heat the mashed potato for 2 minutes in the microwave and add the spring onions to it.
5. Spoon the champ on to a plate and top with the corned beef fritters.
