Cod and Chips cod

Serves 1

Quick Recipe


Ingredients
one third potato, peeled and chipped
110g/4oz cod fillet
290ml/½ pint vegetable oil
For the batter:
110g/4oz plain flour
1 tbsp water
2 egg whites, beaten


Method
1. Heat the vegetable oil in a large saucepan.
2. Bring water to the boil in a small saucepan.
3. In a small bowl mix the flour and water to form a paste. Add the egg white and mix to form a smooth batter.
4. Place the potato chips in the water and boil for 2 minutes.
5. Drain the potato chips well, then place them in the hot vegetable oil. Deep-fry for 3-5 minutes.
6. While the chips are frying, dip the cod in the batter. Add the cod to the hot oil. Deep-fry for 3-5 minutes.
7. Remove the cod and chips from oil and serve.
