Chargrilled chicken with herb potato mash chicken thigh

Serves 1

Preparation time less than 30 mins

Cooking time 10 to 30 mins

Quick Recipe


Ingredients
½ potato, peeled and diced
2 chicken thighs, de-boned and skinned
1 garlic clove, crushed
4 tbsp fresh herbs, chopped
2 tbsp olive oil (plus extra to serve)
½ red onion, halved
1 tbsp butter
½ lemon, juiced
2-3 tbsp balsamic vinegar


Method
1. Bring a small pan of water to the boil.
2. Preheat a griddle pan.
3. Drop the potatoes into the water and boil until soft.
4. Take a rolling pin and bash the chicken thighs flat.
5. Scatter the garlic and half the herbs over the chicken thighs and drizzle them with olive oil.
6. Place the chicken, along with the onion in the griddle and grill for 6-8 minutes.
7. Drain the potatoes and mash with the butter, the remaining herbs and lemon juice.
8. Spoon the mash onto a plate and serve with the chargrilled chicken, onions and a drizzle of extra olive oil and balsamic vinegar.
