Quick Recipe


Ingredients
Cucumber and Tuna Bites:
200g/7oz can tuna, drained and flaked
1-2 tbsp olive oil
a small handful of chopped fresh parsley
good squeeze of lemon juice
½ small red onion, finely chopped
flaked sea salt and freshly ground black pepper
olives, capers or anchovies, finely chopped (optional)
1 cucumber

1. Mix the tuna with the olive oil, parsley, lemon juice and red onion and season with salt and pepper. You can also add a few finely chopped olives, capers or anchovies if you like.
2. Cut the cucumber into 5mm-1cm/¼-½in thick slices (peeled if you prefer) and sit small spoonfuls of the tuna mixture on top of each one. Arrange neatly on a large serving plate.

Peach, Stilton and Parma Ham Wraps:
Make as many as you like
fresh peaches (if you don't have fresh, use canned)
Stilton cheese
parma ham (or any good dry-cured ham such as black forest, serrano
or prosciutto)
freshly ground black pepper
olive oil, for drizzling

1. Cut the peaches into fairly thick wedges, then slice the Stilton to approximately the same size. Place a peach wedge and piece of Stilton together and wrap in half a strip of parma ham. Continue in this way until you have used all the peaches, Stilton and ham.
2. Season with pepper and drizzle over some olive oil. Arrange neatly on a large serving plate.

Jamaican Ginger Cubes:
Makes 36
1 bought Jamaican ginger cake
couple of balls of stem ginger in syrup

Cut the Jamaican ginger cake into 2 cm/¾in squares and line up neatly on a large, flat plate. Finely chop the stem ginger and add some to the top of each piece. Spoon over a little of the ginger syrup and serve.

Juicy Fruits with Lemon Cream:
Make as many as you like
lemon curd
crème fraîche or natural yoghurt
ripe strawberries, cherries, grapes; cubes of melon, pineapple, kiwi fruit, peaches, nectarines, mango or papaya

Mix together one third lemon curd to two thirds crème fraîche or natural yoghurt. Transfer to a small dish and dip fresh and deliciously ripe strawberries, cherries, grapes, and cubes of melon, pineapple, kiwi fruit, peaches, nectarines, mango or papaya into the cream.

Tip:
If the strawberries seem shallow in taste, add a twist of black pepper, which will bring out a fuller flavour.
