Caesar salad with avocado and bacon avocado

Quick Recipe


Ingredients
For the salad
1 little gem lettuce, leaves separated, chopped
1 avocado, peeled, stone removed, chopped
2 bacon slices, cooked until golden and chopped
For the dressing
½ lemon, juice only
150ml/5fl oz olive oil
½ garlic clove, crushed
½ tsp Dijon mustard
For the croutons
110g/4oz bread, cut into chunks
3 tbsp oil


Method
1. For the salad, place all of the salad ingredients into a bowl and set aside.
2. For the dressing, place all the vinaigrette ingredients into a food processor and blend until smooth. Add to the salad, and mix well.
3. For the croutons, heat the oil in a frying pan and, when hot, add the bread cubes. Cook 2-3 minutes, or until golden.
4. To serve, add the croutons to the salad bowl.
