Ingredients
½ red onion, diced 1 clove garlic, crushed 2 tbsp olive oil 290ml/10fl oz vegetable stock 110g/4oz tinned cherry tomatoes 110g/4oz cabbage, finely shredded ½ tsp paprika ½ tsp oregano 1 tbsp parsley, chopped to garnish
Method
1. Sauté the onion and garlic in the oil for 3-4 minutes until soft. 2. Add all the other ingredients and simmer for 8-10 minutes 3. Serve in a bowl and garnish with the parsley.
