Broad Bean Pesto broad bean (fresh)

Serves 2

Preparation time less than 30 mins

Cooking time less than 10 mins

Vegetarian Quick Recipe


Ingredients
140g/5oz frozen broad beans
30g/1oz fresh basil, chopped
30g/1oz manchego cheese, finely grated
3 tbsp olive oil
pinch of salt


Method
1. Place the beans in a medium bowl and then pour over enough boiled water to cover the beans. Set aside for 2-3 minutes.
2. Drain the beans, then rinse under cold water.
3. Remove the beans from their skins.
4. In a food processor blend the beans with the remaining ingredients to a rough paste.
5. Serve.
