Breakfast Fry Up sausage

Serves 1

Quick Recipe


Ingredients
2 tomatoes, halved
2 pork sausages, split in half lengthways
4 eggs
3-4 tbsp vegetable oil
salt and freshly ground black pepper


Method
1. Heat a little oil in a frying pan and cook the halved tomatoes with the halved sausages until the sausages are brown all over.
2. Break the eggs into a dish. Heat 3 tbsp oil in a separate frying pan until it is hot but not smoking. Slide the eggs into the pan and fry over a medium heat, basting with fat if you like, until the white is firm and the yolk still soft. The underside should be lightly browned and crisp. Season with salt and pepper.
3. Serve the eggs, sausages and tomatoes on a hot plate and eat at once.
