This creamy, tangy dessert takes just a few minutes to make. Strawberries or raspberries can be used instead of the blackberries if preferred.
500g/1lb2oz mascarpone cheese
200g/7oz blackberries
1½ lemons, juice and zest
120ml/4 fl oz double cream
6 tbsp icing sugar
To garnish
blackberries
sprigs of fresh mint
icing sugar
langue du chat biscuits or wafers
1. To make the fool, place the mascarpone, blackberries, lemon juice and zest, double cream and icing sugar in a blender and puree until smooth.
2. Spoon into serving dishes and chill for a few hours before serving.
3. Decorate with a few berries on the top and a sprig of mint and a dusting of icing sugar and serve with the biscuits or wafers.
