Ingredients
2 tbsp olive oil 1 garlic clove, chopped 2 roasted pepper strips from a jar, chopped 8 cherry tomatoes, cut in half 6 baby salami sausages, cut in half lengthways 85g/3oz tinned cannellini beans, rinsed and drained ½ courgette, diced 2 tbsp fresh parsley, chopped salt and freshly ground black pepper
Method
1. Heat the oil in a pan, add the garlic and sauté for 1 minute. 2. Stir in the peppers and the cherry tomatoes and heat for 2-3 minutes. 3. Stir in the salami, beans and courgette and simmer gently for 6-8 minutes, stirring occasionally. 4. Add the parsley and season, to taste, with salt and freshly ground black pepper. Transfer to a serving bowl and serve.
