500g/1lb 2oz fresh rhubarb
140g/5oz white sugar
2 vanilla pods
1. Preheat the oven to 200C/400F/Gas 6.
2. Trim the ends of each piece of fruit and cut in half if very long. Place all the fruit in a roasting tin and top with the sugar.
3. Run a knife through the centre of the vanilla pods and place on top of the sugar.
4. Cover the tin with foil and seal well. Place in the oven and cook for 20 minutes.
5. Remove from the oven but leave the foil in place for 10 minutes. Serve hot or cool and eat later.
