Bananas Foster banana

Serves 4

Vegetarian Quick Recipe


Ingredients
60g/2½oz butter
125g/4½oz brown sugar
½ tsp ground cinnamon
4 tbsp banana liqueur
4 bananas, peeled and quartered
4 tbsp dark rum
4 scoops ready-made vanilla ice cream, to serve


Method
1. Heat a frying pan over a medium heat and cook the butter, sugar and cinnamon until the sugar has melted.
2. Stir in the banana liqueur, then add the banana pieces and cook, stirring carefully, until softened and beginning to turn golden-brown.
3. Add the rum and stir to combine. Turn up the heat and carefully flambé the rum until the flames die out.
4. To serve, place a scoop of ice cream onto four serving plates. Top with the banana pieces and pour over the sauce from the pan.
