Banana fritters banana

Serves 1

Vegetarian Quick Recipe


Ingredients
enough oil for deep frying
110g/4oz self-raising flour
1 tbsp baking soda
2 free-range eggs
splash of iced fizzy water
2 bananas, sliced on the diagonal
For the sauce
100g/3½oz caster sugar
85ml/3fl oz double cream
85g/3oz butter
50g/1¾oz hazelnuts, crushed


Method
1. Heat the oil in a large sauceoan ready for deep frying. (CAUTION: Hot oil can be dangerous, do not leave unattended).
2. Mix together the flour, baking soda, eggs and water to make a batter.
3. Dip in the slices of banana to coat, then fry in the hot oil for 2-3 minutes or until crisp and golden. Remove with a slotted spoon and drain on kitchen paper.
4. For the sauce, caramelise the sugar by heating it gently in a hot pan until it turns golden. Once it's golden-brown, add the cream and butter and bring to the boil. Let it reduce for a minute or two, then add the hazelnuts.
5. Pour over the bananas fritters and serve.
