Banana and cheddar bread banana

Makes 1

Preparation time less than 30 mins

Cooking time 10 to 30 mins

Vegetarian Quick Recipe


Ingredients
50g/1¾oz butter
1 banana, peeled
50g/1¾oz cheddar, grated
50g/1¾oz self-raising flour
30ml/1oz milk
1 tbsp fresh chives, finely chopped
1 tomato, skinned, de-seeded and finely diced


Method
1. Preheat the oven to 200C/400F/Gas 6.
2. Place the butter, banana, cheddar, and flour in a food processor and blend, adding milk, until the dough comes together.
3. Place the dough on a flat surface and roll into a thick sausage shape.
4. Slice into six even rounds. Place a round in the centre of a baking sheet and place each remaining round side by side around the centre, so that the arrangement will resemble a flower with five petals. Press together slightly to ensure the rounds are touching.
5. Sprinkle with the chives and tomatoes.
6. Brush with milk and place in the oven to bake for 15 minutes, or until cooked through.
7. Serve the banana bread warm as an accompaniment to soup or a main course.
