'Baked' beans haricot bean

Quick Recipe


Ingredients
2 tbsp olive oil
1 onion, sliced
2 cloves garlic
1 fresh chilli, halved, de-seeded, finely chopped
400g/14oz tinned plum tomatoes, chopped
400g/14oz tinned haricot beans, drained and rinsed
225g/8oz tinned line-caught tuna, drained and coarsely flaked (optional)
1 tbsp chopped fresh parsley
1 tbsp chopped fresh oregano
salt and freshly ground black pepper


Method
1. Heat the oil in a saucepan, then add the onion fry over a medium heat for 4-5 minutes, or until softened.
2. Add the garlic and the chilli and stir it into the onion. Cook for a further 4-5 minutes, or until the onion is translucent and the chilli is soft.
3. Tip in the tomatoes and their juices, the haricot beans, the tuna (if using) and chopped fresh herbs. Simmer for 4-5 minutes, or until the beans are heated through. Season with salt and freshly ground black pepper.
4. Tip into a serving bowl and serve immediately.
