Baked Alaska with chocolate mint ice cream

Serves 2

Quick Recipe


Ingredients
3 eggs
1 tbsp caster sugar
6 scoops vanilla ice-cream
4 After Eight chocolate mints
½ bottle miniature grand marnier


Method
1. Place the egg whites in a large clean bowl and whisk to form stiff peaks. Whisk the sugar in until the whites become stiff and glossy.
2. Place three scoops of ice-cream onto a serving plate.
3. Break up the chocolate mints and sprinkle on top of the ice-cream. Top with the remaining three scoops of ice-cream.
4. Spoon the meringue mixture over the ice-cream until completely smothered.
5. Using a blow-torch, carefully finish off the meringue to give it an even, golden colour.
6. Reduce the alcohol in a hot pan and pour over the alaska to finish.
7. Serve immediately.
