Ingredients
2 tsp olive oil 6 asparagus spears For the hollandaise: 3 eggs, yolks only 1 tsp white wine vinegar salt 170g/6oz butter, melted
Method
1. Preheat the oil in a griddle pan. 2. Preheat a medium saucepan. 3. Place the asparagus in the griddle pan. Griddle for 3-4 minutes. 4. While the asparagus is cooking, prepare the hollandaise. Place the egg yolks, vinegar and salt in the saucepan. Whisk. 5. Slowly whisk in the melted butter. 6. When the sauce has thickened and the ingredients are well bound together, remove from the heat. 7. Remove the asparagus from the griddle pan and place on a small plate. Pour over the hollandaise sauce and serve.
