Ingredients
6 asparagus spears, trimmed 2 tbsp olive oil 1 free-range egg salt and freshly ground black pepper
Method
1. Heat a griddle pan until hot. Toss the asparagus spears in one tablespoon of the olive oil and lay on the hot griddle pan. Cook for 2-3 minutes until slightly wilted. 2. Heat the remaining one tablespoon olive oil in a small frying pan and fry the egg to your liking. 3. Arrange the griddled asparagus on a plate and top with the fried egg. Season with salt and freshly ground black pepper, to taste.
