125g/4½oz ready-made brioche
125g/4½oz cream crackers, crushed
200g/7oz butter, softened, plus extra for greasing
200g/7oz demerara sugar
1 tsp ground cinnamon
pinch freshly grated nutmeg
1 vanilla pod, split lengthways, seeds scraped out
500g/1lb 2oz apples (250g/9oz eating apples, 250g/9oz cooking apples), peeled, cored and sliced
125g/4½oz blueberries
crème fraîche, to serve
1. Preheat the oven to 175C/325F/Gas 3.
2. Place the brioche into a food processor and pulse until broken into crumbs.
3. In a bowl, mix together the brioche breadcrumbs, crushed crackers and butter until well combined.
4. In another bowl, mix together the sugar, cinnamon, nutmeg and vanilla seeds until well combined.
5. Lightly grease an ovenproof dish. Sprinkle a third of the crumb mixture over the base of the dish. Cover with half the apples and blueberries, followed by half the sugar mixture. Continue layering the ingredients until they're all used up, finishing with a layer of crumbs.
6. Transfer to the oven and bake for about 25 minutes, or until the apples are just soft.
7. To serve, divide among six serving bowls and serve with a dollop of crème fraîche.
