
This is the perfect midweek supper – make it more special by adding a few strips of smoked salmon when you stir in the cooked pasta.
450g/1 lb pasta, cooked according to packet instructions, drained
3 tbsp olive oil
1-2 garlic cloves, chopped
2 red onions, sliced
3 x 150g/5½oz fresh salmon fillets, skinned and cubed
300ml/10fl oz double cream
3 tbsp chopped fresh parsley
Cook the pasta according to packet instructions in a pan of salted boiling water, then drain.
Meanwhile, heat the oil in a frying pan, add the garlic and red onion and fry for 3-4 minutes or until the onion has softened.
Add the salmon cubes and double cream and continue to cook over a gentle heat for five minutes, or until the salmon has cooked through.
Stir in the drained pasta and season, to taste, with salt and freshly ground black pepper. Stir in the parsley.
