6 tbsp pear concentrate
1 litre/1¾ pint sparkling water
1 litre/1¾ pint cranberry juice
1 medium pear, cut into 1cm/½in pieces
sprigs of fresh mint
Mix the pear concentrate with the sparkling water.
Add the cranberry juice and chill well.
Just before serving, add the chopped pear, and garnish with fresh mint leaves.
