Couscous with lemon and pine nuts


Preparation method

  1. Place the couscous in a bowl, and cover with boiling water. Cover with cling film and allow to steam for 5-6 minutes.

  2. Fluff up the couscous using a fork. Stir in the raisins, lemon zest and juice, pine nuts, spring onions and parsley. Allow to sit for a few minutes, to absorb the flavours.

  3. Spoon the couscous into a bowl to serve.
