Citrus-pickled veg with mozzarella salad

A fresh tangy feast of citrus-pickled vegetables. No cooking, and perfect for preparing in advance.


Preparation method

  1. Add the finely sliced carrots, shallots and radishes to a bowl. Squeeze the juice over the top and add the red wine vinegar and olive oil. Leave for an hour.

  2. When ready to serve, tear apart the mozzarella. Serve with the vegetables and drizzle over the pickling liquid.
