Make this simple pasta with broccoli, anchovies, chilli and garlic to keep Christmas Eve stress-free and flavour-packed.
Cook the pasta into a large pan of boiling, salted water according to packet instructions. Add the broccoli to the pasta for the last 3-4 minutes of cooking time.
Meanwhile, heat the olive oil in a large, non-reactive frying pan over a medium heat. Add the shallots, garlic and chilli and fry gently for 4-5 minutes, or until softened.
Add the salted anchovies and fry for a further 3-4 minutes, or until they've broken down. Stir in the red wine vinegar and bring to the boil. Simmer until slightly reduced in volume.
Add the chopped parsley and capers to the sauce. Just before draining the pasta, add a couple of spoonfuls of the water from the pasta pan to the sauce to loosen it.
To serve, drain the pasta (and broccoli) and spoon into warm serving bowls. Top with the sauce, then arrange the marinated anchovies on top. Sprinkle over the parmesan and lemon zest. Garnish with freshly ground black pepper.
