
150g/5½oz medium egg noodles
30g/1oz butter
30g/1oz cornflour
100g/3½oz caster sugar
150ml/¼ pint milk
3 tbsp cocoa powder
2 free-range egg yolks
Place the noodles into a large heatproof bowl and pour over enough boiling water to cover. Leave for 4-5 minutes, or until softened, then drain and place into a serving bowl.
Meanwhile, heat the butter in a saucepan and add the cornflour. Cook, stirring continuously, for 2-3 minutes.
Add the sugar and pour in the milk gradually, stirring continuously to avoid any lumps forming. Bring the sauce to the boil and simmer for 3-4 minutes.
Remove from the heat and whisk in the cocoa powder and egg yolks until the sauce thickens.
To serve, pour the chocolate sauce over the cooked noodles, mix well and serve warm.
