Put the milk in pan to heat. Bring to the boil and add the cream, keep warm.
Put the chocolate and butter in a bowl and mix well. Grate the ginger into the mixture, add the golden syrup, hot milk and cream and stir until melted.
Sieve the sauce and keep warm until needed.
