
Bake a deliciously naughty chocolate fudge cake, with orange for extra bite.
125g/4½oz butter
225g/8oz soft dark brown sugar
2 free-range eggs
150ml/5½fl oz soured cream
175g/6oz plain flour
1 tsp baking powder
1 tsp bicarbonate of soda
50g/1¾oz cocoa powder
1 orange, zest only
200g/7oz orange dark chocolate, melted
2 heaped tbsp cocoa powder
150ml/5½fl oz double cream
berries and double cream, to serve
Pre-heat the oven to 180C/350F/Gas 4. Grease and line two 20cm/8in sandwich tins.
Beat the butter and sugar in a bowl until light and fluffy.
Beat in the eggs, and then the soured cream until well combined. Sift in the flour, baking powder, bicarbonate of soda and cocoa powder. Fold in the orange zest.
Divide the mixture between the two 20cm/8in sandwich cake tins and then bake for 30-35mins. (Test by inserting a skewer through the centre of the cake. If it comes out clean, the cake is ready. Leave to cool.)
For the frosting, add a little water to the cocoa until it forms a paste. Stir the mixture into the melted chocolate and beat in the cream until well combined.
Spread the frosting over one cake and top with the other cake. Transfer the cake to a serving plate and ice the cake all over using a pallette knife.
Serve with berries and cream.
