
150g/5oz self-raising flour
1 tsp baking powder
100g/3½oz Red Leicester cheese, grated
2 tbsp chopped fresh parsley
100ml/3½fl oz Greek-style yoghurt
2 tbsp milk
2 free-range eggs
butter, for greasing the baking sheet
Preheat the oven to 180C/350F/Gas 4.
Mix the flour, baking powder, cheese and parsley in a bowl.
In a separate bowl, beat the yoghurt, milk and eggs until well combined.
Add the cheese mixture to the egg mixture and mix well to combine. With your hands, compact the dough mixture to form a loaf shape.
Place the loaf onto a clean, floured work surface and knead lightly.
Place the loaf onto a greased baking sheet and lightly score the top of the loaf several times with a sharp knife. Bake for 12-15 minutes, or until risen and golden-brown.
