
350g/12oz self-raising flour, plus extra for dusting
2 tsp baking powder
115g/4oz butter, cubed
salt and freshly ground black pepper
150ml/5fl oz milk
85g/3oz cheddar cheese, grated
3 tbsp honey, plus extra to serve
3 sprigs fresh thyme, leaves only
Preheat the oven to 180C/350F/Gas 4.
Place the flour, baking powder, butter, salt and freshly ground black pepper into a food processor and blend until the mixture resembles fine breadcrumbs.
Gradually add the milk and process until the mixture just comes together. Turn out onto a floured surface and knead for 2-3 minutes, then roll out thinly with a rolling pin.
Scatter over the cheese, honey and thyme, then roll the dough up like a Swiss roll. Cut the roll into six pieces and place them cut-side up on a non-stick baking sheet.
Bake in the oven for 15 minutes, or until golden-brown. Remove from the oven and allow to cool slightly.
To serve, pile onto a serving plate and drizzle with honey.
