450g/1lb filo pastry
melted butter, for brushing
200g/7¼oz pine nuts
200g/7¼oz cream cheese
½ tsp ground cloves
1 tbsp honey
Preheat the oven to 180C/350F/Gas 4.
Mix the filling ingredients together in a bowl.
Unfold the filo pastry and, using a sharp knife, carefully cut into thirds. Take two pieces and fold in half. Brush over with melted butter. Keeping the narrow end towards you, take some of the filling and spread over the pastry keeping a border free along all sides. Fold over the bottom to cover the filling. Fold the sides in and roll up.
Place the rolls onto a greased baking sheet and brush generously with butter.
Bake for 10-15 minutes or until golden brown.
Serve the baklava with a drizzle of honey and the toasted pine nuts scattered on top.
