
½ cob sweetcorn
100g/3½oz halloumi cheese, thickly sliced
55g/2oz butter
1 garlic clove, crushed
salt and freshly ground black pepper
½ lemon, juice only
Heat a griddle pan over a high heat and add the corn. Grill the corn, turning it over occasionally, until nicely golden-brown and slightly charred all over.
After a few minutes, add the slices of halloumi and grill for 2-3 minutes on both sides, or until golden-brown and slightly charred. Remove from the pan and place onto a serving plate.
Melt the butter in a small pan until foaming and fry the garlic for 2-3 minutes, or until softened. Season, to taste, with salt and freshly ground black pepper, then squeeze in the lemon juice. Mix well.
To serve, drizzle the garlic and lemon butter over the corn and halloumi.
