
Add a splash of summer to your cooking all year round by using delicious frozen broad beans.
400g/14oz frozen broad beans, defrosted
4 tbsp olive oil
150g/5oz pancetta, finely diced
4 shallots, finely chopped
salt and freshly-ground black pepper
Remove the tough outer skins of the broad beans.
In a frying pan, heat the olive oil and fry the pancetta and shallots until the shallots are soft and the pancetta golden-brown. Add the prepared beans and simmer for a further 2 minutes.
Season with salt and freshly ground black pepper.
