Broad bean, pea shoot and mint salad

A simple salad full of strong flavours. Perfect for lunch with fresh bread or toast.


Preparation method

  1. Boil the broad beans in water for two minutes and then dunk into a bowl of ice-cold water. Peel the beans and leave aside.

  2. Blend the mint in a food processor with the olive oil. Season with salt and pepper.

  3. Toss the beans together with the pea shoots, dress with the mint oil.
