
3 segments pink grapefruit
handful fresh raspberries
2 tsp elderflower cordial
1 tsp marmalade
½ pink grapefruit scooped out to make a 'boat'
handful mixed fruit salad (with fruit such as melon, pineapple, seedless grapes, blackberries and apple)
ice, to taste
natural yoghurt, to decorate
Place the grapefruit segments and raspberries into a cocktail shaker and crush (muddle) with the end of a rolling pin.
Add the elderflower cordial and marmalade.
Fill the grapefruit 'boat' with the mixed fruit salad.
Add a little ice to the cocktail shaker, mix well and strain the liquid over the grapefruit boat
Serve with a teaspoon and some yoghurt on the side.
