Breakfast fruit cocktail

Ingredients

  • 3 segments pink grapefruit

  • handful fresh raspberries

  • 2 tsp elderflower cordial

  • 1 tsp marmalade

  • ½ pink grapefruit scooped out to make a 'boat'

  • handful mixed fruit salad (with fruit such as melon, pineapple, seedless grapes, blackberries and apple)

  • ice, to taste

  • natural yoghurt, to decorate

Preparation method

  1. Place the grapefruit segments and raspberries into a cocktail shaker and crush (muddle) with the end of a rolling pin.

  2. Add the elderflower cordial and marmalade.

  3. Fill the grapefruit 'boat' with the mixed fruit salad.

  4. Add a little ice to the cocktail shaker, mix well and strain the liquid over the grapefruit boat

  5. Serve with a teaspoon and some yoghurt on the side.
