
1 medium red cabbage, quartered, cored and sliced
2 red onions, peeled and sliced
80g/3oz dried cranberries
2 Bramley apples, peeled, cored and grated
1 tsp ground cinnamon
25g/1oz demerara sugar
3 tbsp red wine vinegar
Salt and pepper
Preheat the oven to 170C/3325F/Gas 3.
Mix the cabbage with the rest of the ingredients and put in an ovenproof dish.
Season well and cover with foil.
Bake in the oven for 60-90 minutes until the cabbage is tender and juicy. Mix the ingredients together 2-3 times during cooking.
Allow to cool and store in the fridge. Reheat when needed.
