
1 tortilla wrap
1 tsp olive oil
200g/7oz tinned black-eyed beans, rinsed and drained
1 tbsp roughly chopped coriander
½ lime, juice only
50ml/2fl oz olive oil
1 tsp sesame oil
1 clove garlic
1 salad onion, chopped
salt and freshly ground black pepper
Preheat the oven to 200C/400F/Gas 6.
To make the tortilla basket, place the tortilla over an oiled dariole mould. Place a second oiled dariole mould over the top. Place in the oven for 5 minutes to crisp up. Remove and allow to set.
To make the guacamole, place all of the ingredients into a blender. Blend to a coarse paste and season well with salt and freshly ground black pepper. Spoon into the tortilla basket and serve.
