
1 clove, crushed
pinch ground cinnamon
2 tsp fresh lemon juice
1 tbsp ready-made Bramley apple sauce, or similar apple sauce, plus 1 tsp to serve
35ml/1fl oz Scotch whisky
1 tbsp apple liqueur
2 tbsp double cream
2 shavings orange zest
2 tsp vanilla syrup
1 oat biscuit, crumbled, to serve
Place the crushed clove, ground cinnamon, lemon juice, apple sauce, whisky, apple liqueur, double cream, orange zest and vanilla syrup into a cocktail shaker. Add ice, replace the lid and shake hard.
Fill a Martini glass with crushed ice and strain the mixture over the ice.
To serve, spoon the additional teaspoon of apple sauce into the centre of the cocktail mixture so that it sits on the surface. Sprinkle over the crumbled oat biscuit. Serve immediately, with short straws and a teaspoon.
