For the salad, mix together all of the salad ingredients in a bowl. Set aside for 10-15 minutes to marinate.
For the steak, rub the oil, thyme and pepper into the fillet steak.
Heat a frying pan over a high heat, then add the seasoned steak and fry for 2-3 minutes on each side, or until cooked to your liking. Remove the steak from the pan and set aside on a warm plate to rest.
To serve, place the steak onto a serving plate. Spoon the cooked potatoes and the salad alongside.
