
Caution: Using liquid nitrogen could cause serious injury by severe freeze-burns - especially if it splashes in your eyes or you get a lot on your skin. Ask the supplier for their advice but: make sure you keep it in a container designed for the purpose; wear goggles, waterproof gloves and a waterproof apron. If you are using it regularly then invest in specialised "cryo" gloves and apron.
Place all of the ingredients into a blender and blend until smooth.
Reduce the speed and slowly add the liquid nitrogen. (CAUTION: liquid nitrogen is extremely cold. Wear gloves when handling and avoid skin contact.)
Scoop the mixture into ice cream cones. Garnish with a cinnamon stick and a grating of nutmeg on top.
