Pilchards - the adult sardine - are blue-green oil-rich fish about the size of a herring. They are a good source of omega-3 fatty acids and a sustainable choice.
Pilchards are rarely available fresh and are mainly sold processed and canned. You’re most likely to find them fresh during the summer months. They are a speciality in Cornwall where they swim to their northern limit.
Fresh pilchards are delicious cooked as you would sardines – barbecue them and serve with a rich tomato sauce or just butter and lemon.
