Cooking with Irish produce

Adapt the following recipes to include Irish produce.

Try using Gabriel cheese in place of cheddar in this fondue and serve it with chunks of soda bread.


Replace the cheddar with Gabriel cheese and use Irish Desmond instead of the parmesan for a cheese sauce full of Irish flavours. Serve the sauce over a big bowl of fried leeks. You could also try pouring the sauce over a mound of mashed potato, sprinkling over a little extra grated Gabriel and finishing under a hot grill until golden and bubbling.


This recipe uses dried dulse, another popular Irish seaweed.


Sea lettuce, another edible seaweed, is used in this recipe.
