A Mexican dish of mashed avocado mixed with lemon or lime juice and various seasonings (usually chilli powder and red pepper). Sometimes finely chopped tomato, onion and coriander leaf are added. Guacamole can be used as a dip, sauce, topping or side dish.

Guacamole is delicious as a topping for burgers or jacket potatoes and is usually served as an accompaniment to fajitas, along with soured cream. Make it chunky or smooth, according to taste. If you're making guacamole in advance, sprinkle with lemon juice or cover well with cling film because avocado goes brown quite quickly once it’s exposed to the air.
