Having dedicated nearly a decade to creating a destination restaurant in the North West, Simon is known for his inventive approach to fine dining.
Simon worked with many of the big names in British cooking before taking the plunge to open his own restaurant, L’Enclume, in the Lake District. Since opening he has been awarded a Michelin star and has been placed in the top five best restaurants by the Good Food Guide.
